Get ready to have Chef Carmine Russo guide you through the ins and out of making fresh pasta. Chef Carmine Russo of Central New Mexico Community College has been named Chef of the Year by the New Mexico Restaurant Association.
Enjoy a scrumptious dinner complete with homemade Basil Tomato Sauce and Meatballs. There will be plenty to take home!
Taught By: Chef Carmine Russo of Central New Mexico Community College has been named Chef of the Year by the New Mexico Restaurant Association. Russo has cooked professionally for 32 years, has been a certified Chef de Cuisine, and certified culinary educator, with The American Culinary Federation, and is currently a, Master Certified Food service Executive, with the world-wide International Food service Executives Association. He has worked several positions ranging from pastry chef to head chef before entering the culinary teaching profession at CNM, then called TVI, in 1991.
Brewing & Beverage Classes
At this time we do not have any Non-Credit, Beer-related classes scheduled.
Interested in starting a career in brewing? The Brewing & Beverage Management program prepares students for direct employment in the fast-growing beverage industry providing an in-depth approach to craft beer brewing and technology. Degrees and certificates include:
- Beverage Management — Certificate of Completion
- Brewing and Beverage Management (AAS)
- Brewing Technology — Certificate of Achievement
As a safety precaution, participants in all culinary classes are encouraged to wear covered, non-slip shoes (e.g. tennis shoes) and comfortable long pants. Aprons or any other personal items may also be brought to class. The college, however, will not be held responsible, if such items are lost or stolen.
Refunds are given to all cancellations seven calendar days prior to the class. After that time, no refunds are available as class supplies are purchased. If CNM cancels a class, participants will receive a full refund in the manner of initial payment received or the ability to transfer payment to another course.
Should CNM cancel a class
In most cases we require at least five students for a class to run. If we have to cancel a class due to low enrollment, we will notify you at least two days before the class is scheduled to begin. If you need more notice, we suggest you call or email the office to check enrollment. If we have to cancel your class, you can request a full refund of your tuition or transfer to another course of your choice, space permitting. Per CNM policy, if you pay with a check or money order you must provide your Social Security Number to obtain a check refund
